- Corrective Action(s): Discarded. Operator made a new batch and stored it in other working hot holding drawers. Ensure that all hot potentially hazardous foods are stored >60C at all times

- Observation (CORRECTED DURING INSPECTION): High temperature dishwasher measured 65C maximum at the dish surface. Machine was run several cycles and 2X different thermometers and a thermolabel were used for temperature measurement.
- Gauge on the machine indicated that the unit had a sanitizing rinse temperature of 87C (189F)
- Corrective Action(s): Do not use the high temperature dishwasher for sanitizing dishware. Operator to use 3 compartment sink manual warewashing procedures.
- Contractor called for the dishwasher, technician to attend tomorrow.

- Corrective Action(s): Removed. Do not block this handsink. All handsinks must be accessible and stocked with liquid soap, paper towels, and hot/cold running water

- Rodent droppings observed underneath and on top of the desk in the managers office, behind garbage can at food station, behind the shelves at the ice machine, and in cabinets adjacent to the FOH dining room entrance gate, and in hard to reach areas throughout the facility
- Corrective Action(s): Conduct a deep clean of the facility and sanitize using 100 ppm chlorine bleach solution.
- Provide the last 3 service reports by your contracted pest control company to [email protected]
- Follow all pest control recommendations.
- Call pest control immediately to service all traps and remove catches found during today's inspection.
