- 209 - Food not protected from contamination [s. 12(a)]
- Observation: A large packet of toasted medium coconut in a food grade container was seen uncovered without any lid or covering inside the walk in cooler, thus making it open to contamination. (Public Health Significance): Contamination of food from contact with objects, people, pests or chemicals can cause serious illness and thereby must be prevented by covering and protecting the food from any sort of contamination.
- Corrective Action: Advised the operator to cover the food (toasted medium coconut) using a lid or any food-grade covering. Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and employees.
- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: The right side hood of the cold prep table in the kitchen was observed to have accumulated food debris, grime and grease. (Public Health Significance): Accumulated food debris and grease on a food contact surface, such as the hood of a cold prep table, can harbour harmful micro-organisms or bacteria that may contaminate food as well as attract pests.
- Corrective Action: Clean and sanitize the hood of the cold prep table thoroughly to remove all accumulated food debris, grime and grease. Establish a regular cleaning schedule to prevent future build -up, ensuring all food contact surfaces are properly cleaned, sanitized and maintained.
- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) No active sanitizer detected in one of the sanitizer containers. The sanitizing solution (QUATs) observed to be at 100 ppm, during the time of inspection. (Public Health Significance): Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
- Corrective Action: Employee was directed by the manager to change the sanitizing solution immediately to reach 200 ppm concentration (QUATs) and was corrected at the time of inspection. Change sanitizing solutions as required to always maintain an effective concentration (200 ppm QUATs)- follow manufacturer's specifications.
