    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Bowl in the cooler in contact with the cooked rice, bottoms of containers of food products directly in contact with food in the containers below. These are cross contamination hazards.Ensure that all food in coolers is covered to prevent contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The temperature of some sauces in the hot holding unit in the kitchen were below 50 degrees Celsius. Sauces needed to be reheated before being placed in the hot holding unit. Covers on the containers will help maintain the temperature until ready to serve.Hot holding and cooler temperatures not recorded. Records of food temperatures must be checked and recorded.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Screen on the screen door at the back is damaged. Replace the screen so that it will stop pests from entering.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Service counter is worn and the edging is starting to detach in places. Tape has been used to do a temporary repair. Tape interferes with cleaning so is not permitted. The counters must be repaired properly or replaced.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. Butcher block tables are worn and not being maintained correctly. Butcher block tables must be made smooth, sealed with food grade oil and maintained in good repair. 2. There is a build-up of grease and food debris on the deep fryers and adjacent cooking equipment. All equipment must be cleaned.3. There is a build-up of dirt and debris on the dishwasher. Dishwasher must be cleaned.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There is a build-up of grease and dirt on shelves above the handwash station, hard to reach areas and under shelves in storage areas.Cleaning must improve. Organization of the kitchen will improve with removal of equipment and items not needed.Written procedures and records do not list all areas and equipment that require cleaning.
