      • Utensils were placed in the handwashing sink basin in the four-compartment sink.- Dedicate one of the basins in the sink to hand washing and use only for handwashing, no dishes or prep done in this sink.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1. There is a gap under the door from the common area hallway and the back production area. - Provide door sweep to seal the gap.2. There was a gap at the bottom middle of the back double doors.- Seal the gap to prevent potential pest entry.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Flour debris buildup was noted on the shelving unit in the walk-in cooler.- Thoroughly clean the area.

      • 1) There is a gap under the door from the common area hallway and the back production area. 2) Floor sweep for the back double doors in the back production area was not fully flush, leaving a gap between the floor and the doors3) A hole located in the corner of the floor under the production counters in the dough room.
