      • Spray bottles containing chlorine-based sanitizing solutions were not labeled to indicate their contents.Ensure bottles are labeled.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. One hundred and eighty eggs were stored at room temperature. Internal temperature of one egg measured 19 degrees Celsius. Do not store numerous flats of eggs at room temperature. Internal temperature of hard-shelled raw eggs should not be more than 7 degrees Celsius.2. Ham stored in top section of prep line cooler measured 20 degrees Celsius. Product was stacked well above the "fill" line. Do not store product above the fill line as it will not maintain required temperature. Product discarded.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Duct tape used on dishwasher, kitchen door and handles for cooler in front coffee / drinks area.Do not use tape on food equipment as it is sticky and not cleanable.

      • **Corrected**Wet cleaning cloth was observed on the food counter in the back kitchen. - Operator moved the cloth to designated dirty laundry area. **Please use cleaning cloth once or submerge it in the sanitizer solution (200ppm QUATS or 100ppm chlorine) if reusing.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Meat slicer in the back kitchen has food debris build up. **Please clean to prevent contamination of food.

      • Some inserts across from the grilling area are unable to maintain an adequate temperature of 4C or blow.**Please add a cover to this area or do not fill the inserts so high. Monitor temperature frequently.
