      • A container of individual cream cheese packets were being stored above 4°C at the breakfast bar. The operator moved the container into the yogurt cooler.
    • 15. Is the facility free of a pest infestation?
      • Significant ant activity observed beneath the dishwashing sink and the dishwasher. The operator mentioned that the kitchen was recently serviced by pest control and will be providing the service reports.*Ensure the floor beneath the sink is thoroughly cleaned. Remove items off the ground and keep them elevated. Ensure the black mat next to the sink is cleaned every day.

      • The cream cheese spread measured approximately 20 degrees C.Staff were about to remove them as breakfast service was nearing an end. A discussion was had around ensuring the items remain at 4 degrees C through a combination of:- relocating cold holding items away from hot holding- replacing the insulated containers more frequently throughout breakfast service- using an ice bath- not filling containers to the brim

      • Togo cups and ramekins were used as scoops and left in bulk food containers. They were promptly removed by the operator. Ensure scoops have handles and are not left in containers after use.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There is an accumulation of dust/debris on ceiling vents in the kitchen area.
