      • Buildup noted on the floor of the walk-in-freezer. Please clean the floor.

      • 1. The quaternary ammonium solution was noted to be at 10 ppm. It was noted that staff members were not trained on how to prepare quat solution. Please ensure to use warm water to prepare quat solution and use a test strip to test concentration of quaternary ammonium solution and ensure it is maintained at 200 ppm at all times. Please train staff on preparing quat solution and using test strips.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Food handlers were not washing hands between tasks. Importance of hand washing was discussed with the operator during the inspection. Hands must be washed between tasks. Please wash hands.

      • Please ensure that one person with an approved food safety course must be onsite when six or more food handlers are working. Please submit copies of food safety certificates to this office.

      • Food items were stored in close proximity of soiled dishes. Staff members noted preparing sanitizing solution in soiled sink containing soiled dishes. The sinks were cleaned during the inspection. The operator was advised to train staff.

      • It was noted that the auto dispenser was noted to be dispensing quat solution between 100 -200 ppm. Please calibrate the auto dispenser and ensure that the auto dispenser is dispensing quat solution at 200 ppm at all times.
