- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The chemical commercial dishwasher was able to eject 100ppm chlorine at the sanitizing cycle - satisfactory. However, only a rinse aid and chlorine sanitizer jug were connected to the dishwasher. Please ensure a detergent is also obtained and properly connected to the remaining dispensing line, as it is needed to clean and remove food residue prior to disinfection with the chlorine.A small water drip was also noted during the cycle and was brought to the attention of the staff that were servicing the dishwasher at the time of the inspection.It was confirmed that this issue would be addressed promptly, and that a detergent will be added prior to starting operations.
