- Daily temperature logs are maintained are maintained for refrigeration units. However, please ensure hot-holding unit temperatures are also monitored and recorded daily (ensuring it can maintain above 60C). If an analog thermometer is stored within the unit, please also ensure a sanitized, calibrated probe thermometer is used to take internal food temperatures at regular intervals.
