    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Carpet covered mats were in place on the floor in the dishwashing area. Carpet is not a suitable flooring material for a kitchen as it's not smooth, impervious to moisture, and easy to clean.
      • Corrective Action: Carpet covered mats in the kitchen must be removed. If the floor in the dishwashing area of the kitchen needs to be covered for slip resistance, a more suitable material must be used (e.g., rubber mats) or the floor refinished with a slip resistant coating.
