    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: Refrigeration Temperatures are slightly elevated (greater than 4°C): The sandwich prep station with cold-holding units in the areas referred to as the build and cut stations (containing cut vegetables, mushrooms, cheese, etc.) was observed with elevated and fluctuating temperatures (9–11°C). (Public Health Significance): Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production.
      • Corrective Action: This was discussed with both the kitchen manager and staff present at the time of inspection. The operator must ensure that foods kept in the prep station are held there only for the safe two-hour period during preparation and peak customer times, after which they must be returned to the lower refrigeration units or coolers when not in active use. Staff must regularly monitor and log internal temperatures, and the operator must adjust or repair the equipment as necessary to ensure it consistently maintains a temperature of 4°C.

      • Observation: Food held in the Prep table temperature is above 4ºC; temp varies from 8ºC to 11 ºC
      • Corrective Action: Food in the prep table must be removed after two hours. Keeping the food covered while not busy will reduce the risk of food poisoning.
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: The walk in fridge floor is dirty as is the walk in freezer.
      • Corrective Action: Thorough cleaning of the walk-in fridge and walk in freezer is required.
