      • Damp wiping cloth was found sitting on the table beside the dishwasher.REQUIRED ACTION: cleaning cloths are to be stored in sanitizing solution in between uses in order to prevent cross-contamination.

      • No sanitizer was detected at dish level after the final rinse of the dishwasher. The lines connecting the rinse aid and the chlorine sanitizer to the dishwasher appeared to be mixed up. There was no bottle of dish detergent connected to the dishwasher.REQUIRED ACTION: the dishwasher must be serviced immediately. Ensure all required chemicals are connected to the dishwasher properly, and that 100 ppm chlorine is dispensing during the final rinse cycle and detected using the chlorine test strips.Dishes are to be manually washed, rinsed and sanitized. You are restricted to using single-use/disposable customer dishes, cups and utensils.

      • Bag of lettuce and a box of kale were noted stored next to and/or below inserts containing raw meats. Opeartor was instructed to re-organize these items so that ready to eat foods are stored above and away from raw meats.Noted August 31, 2023: Ready to eat vegetables were stored below inserts containing raw chicken in the walk-in cooler. Raw meats must be stored below ready to eat foods in order to prevent cross-contamination by raw meat juices.

      • The water draining from the dishwasher into the air break that leads to the drainage system below the dishwasher was overflowing into a bus bin. Servicing required so that the water is draining properly.

      • Ready to eat vegetables were stored below inserts containing raw chicken in the walk-in cooler. Raw meats must be stored below ready to eat foods in order to prevent cross-contamination by raw meat juices.

      • Dough is stored in black garbage bags inside the walk-in cooler. Do not use garbage bags for food storage as they are treated with a chemical for odor suppression which may leach into the food. Use only food-grade plastic bags or containers for food storage.

      • August 31, 2023: the dishwasher is still not working properly- detergent and sanitizer are dispensing at the same time, and the machine does not stop running- it continues to run and dispense chemicals until the operator manually stops the machine.October 28, 2022: The detergent is now dispensing at the same time as the sanitizer during the final rinse/sanitizing cycle. The dishwasher also does not stop running at any point- the operator has to manually stope the machine. The machine must be serviced again so that a proper wash/rinse and sanitizing cycle takes place. Dishes and utensils are to be manually sanitized in the sink until further notice. The dishwasher is not functioning correctly- the detergent is not dispensing, and the sanitizer is dispensing at the start of the wash cycle, as well as during the rinse cycle. Please have your dishwasher company service the machine and provide a report detailing that the machine has been serviced and is functioning properly.
