      • The high temperature dishwasher hot water sanitizing temperature was measured. The unit was operated through numerous cycles with the hottest temperature recorded at 69-70 degrees Celsius. The minimum hot water sanitizing temperature allowable is 71 Celsius. Please service the dishwasher and ensure hot water sanitizing temperature is above 71 Celsius. The facility manager has instructed the staff to wash/sanitize reusable ware by the three-sink manual method. The facility manager shall have the high temperature dishwasher repaired in the near future.
