    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Yes (corrected during inspection) - there was no chlorine sanitizer in the final rinse cycle of the commercial dishwasher in the main kitchen. During use of the priming switches, there was no chlorine sanitizer being pumped into the dishwasher (with detergent and rinse aid pumps functional). The operator is to contact a technician to readjust the specific pump or change the plastic line (as the chlorine line may be clogged with air accumulation or solidified chlorine salt).Also, there were a set of 2-compartment sinks for manual washing, rinsing, and sanitizing (with detergent, cleaning compounds, and chlorine bleach sanitizer available - with test strips provided).Note: the operator was advised to remove the large unused (and non-functional) industrial dishwasher adjacent to the large wash sink in the dishwashing area. Also, it would be beneficial to install a set of 3-compartment sinks in this dishwashing area, as a complement to the commercial dishwasher use.
