      • A reusable cloth towel is being used to dry food handlers hands.- Use single use paper towel to dry hands only,
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The sanitizing step is not occuring when dishware is being manually washed.- Proper manual dishwashing procedures are: Wash with warm soapy water -> Rinse -> Sanitize -> Air Dry
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • A section of wall by the grease trap is exposed insulation.- Seal the area off to ensure a smooth, washable, moisture resistant surface.
