      • 10 ppm chlorine is measured in the dishwasher rinse cycle, needs to be at minimum 100 ppm chlorine.- Manually sanitize all equipment in the dishwash sinks until the dishwasher is dispensing 100 ppm chlorine in the rinse cycle. The dishwasher service technician was called by the operator.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine sanitizer test papers were not available.- Obtain chlorine test strips to ensure that the sanitizer concentration in the dishwasher rinse cycle can be measured.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The cold water tap at one of the kitchen handwash sinks is not working.- Repair required, use the other handwash sinks until the repairs are completed.
