- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Commercial dishwasher was not meeting final rinse temperature (did not reach above 71C after multiple cycles).Please repair the commercial dishwasher to be in good repair, and able to meet the rinse temperature of 82C at the manifold for at least 10 seconds or the plate level at 71C for 10 seconds.Until the dishwasher is repaired, Limited dishes for children use when possible. Strongly recommend disposable dishes are used. 2. Modified 2 compartment sink method for serving dishes and utensils.3. Residential dishwasher on sani cycle may be used for dishes if all dishes can be completed by end of day (using high temp sanitation cycle).*Note that the residential dishwasher will not be allowed for use once commercial dishwasher is repaired.
