    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • A deep freezer was observed in the garage where foods deemed not suitable for human consumption were also being stored at that area. This deep freezer must be relocated to the kitchen area or in the food storage room to avoid potential contamination.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Some foods were being stored on the floor directly in the food storage room. Foods must be stored 6'' above the floor to ease cleaning. Open packaged dry foods should be stored in a food grade pest proof container. Some organization should be carried out to store foods in a clean and neat condition. Recommend that more proper shelving units be obtained.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The garage was full of empty boxes and other not in -used items such as washer and dryer. Cleaning must be carried out to prevent pest infestation. Empty boxes must be disposed of in a timely manner. Recommend that foods used to feed animals be stored in a container prior to being picked up.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • One shelving unit in the kitchen for the storage of foods and utensils were observed dirty. Cleaning must be carried out to it on a regular basis. Another shelving unit in the kitchen was unfinished and should be removed. One made of materials which can be easily cleaned should be used.In addition, spices and foods stored in the coolers and in the cabinets should be re-organized. Supplies should be checked on a regular basis and empty containers should be removed.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • High risk foods such as margarine be kept at room temperature as the package states "keep refrigerated". If it had been kept at room temperature longer than 2 hours, it must be disposed of. Ensure that high risk foods be kept refrigerated at 4C or below at all times.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Some organization in the kitchen needs to be carried out. For example, foods, candies were left open on the countertops and utensils were left on the countertops. Floors and the exterior of the fridge were observed dirty. Cleaning and organization must be carried out at the above noted areas to maintain the kitchen in a sanitary and neat condition at all times.
