    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Foods being stored on the top condiment containers close to the oven were kept at 8C. Since some foods were just refilled, they were required to be transferred to either the bottom of the cooling unit or to the walk-in cooler. Other foods which were kept in there longer than 2 hours must be disposed of. Recommend that containers are only half filled and used up within 2 hours. Containers can be refilled more often since the lid of the cooler is opened very often.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Floors under the shelves in the back storage room were observed dirty. Cleaning must be carried out at the noted areas on a regular basis.

      • The records for secondary cooking temperatures for donair were not kept in place. Ensure that secondary cooking for donair occur each time and temperature records be kept at all times up to inspections.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The filters in the canopy were observed very greasy. They must be removed and cleaned on a regular basis such as once a week.
