      • Raw bacon stored above produce. Ensure that meat products are stored below ready to eat products to decrease risk of contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Container of cream of broccoli was at 27C. Operator indicated it cooling, however it had been sitting for over 2 hours. Discussed proper cooling steps with the operator. Operator discarded the soup. Cool from 60C to 20C in 2 hours or less, and then from 20C to 4C within 4 hours or less for safe cooling. No thermometer on site. Operator to obtain probe thermometer. Please ensure to check doneness of meat products (71-74c)
