      • Facilities not maintaining proper temperature. Observed potentially hazardous foods not being properly transported. Observed containers of shrimp, fish and chips and perch being transported from minivan. Manager states that potentially hazardous foods are prepared at Frank's Chicago Shrimp Franklin Park restaurant and transported inside a unrefrigerated vehicle. Instructed that foods must be protected during storage and must maintain proper temperature. Critical citation issued 7-38-005(A). Instructed manager to store and transport potentially hazardous foods in refrigerated units or containers to maintain temperature 40 F or below.

      • Potentially hazardous foods does not meet temperature requirement during storage, preparation display and service. Found seafood list above on counter and stored inside cooler above arrival. Found shrimp inside cooler at 44.7 F to 49.2 approximately 43lbs, Ocean Perch at 51.2 F to 53.0 F approximately 4.5lbs and Fish and Chips at 45.1 F to 47.8 F approximately 17lbs. Instructed manager that potentially hazardous foods must maintain 40 F or below. Manager voluntarily denatured and discarded. Value $763.25. Critical citation issued 7-38-005(A).
