      • The operator stated that the breading and breading basket at the wing prep station are changed every 4 hours according to company standards. The operator was unsure when the breading basket was last replaced. Please ensure all utensils are properly used, cleaned, and stored. The operator promptly replaced the breading basket and sent the used one for cleaning. It was recommended to set up a timer to track when the breading basket/breading need to be replaced.
