    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The internal temperature of perishable creamers and milk stored in water as the ice had melted were measured between 16.8-18.5C. - Discarded. - Ensure ice is replenished throughout the day. or these perishable items in the cooler at 4C or less at all times.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mice dropping observed by the back exit door. - Clean the droppings and sanitize the area. - Reviewed pest control reports. Continue with existing pest monitoring program.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Front handwash sink was not secured to the counter. Water from the sink was rusting the bottom shelf of the cupboard. Bottom shelf was covered with cardboard. Fix the hand wash sink and refinish the bottom shelf.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Slight dust build-up around the walk-in cooler fan unit. Clean the walk-in cooler. 2) Clutter noted along the back hallway, unable to monitor for pest or clean the space. Remove the clutter.
