      • The Quat sanitizer was measured below 100 ppm.A new solution was prepared by the operator which was tested at 200ppm.-Ensure that the Quat sanitizer is maintained at 200ppm.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Grease and dough noted on the staff aprons.Provide clean aprons for staff.

      • Food was being stored on the floor.The operator removed the food bags.-Ensure that the food is stored at least 6 inches above the floor.

      • The Pizza slices in the hot holding were measured at 55 degrees C.The pizza slices were reheated by the operator which were measured at 87 degrees C.-Ensure that the perishable food in the hot holding must be maintained at 60 degrees C or higher.

      • 1) Dough and grease build-up on the cooler handles. 2) Paper posters were posted on the stand up freezer. This makes it hard to clean the freezer doors. 3) Stains on the potatoe cutter.

      • Scoops were stored inside the food containers.-Ensure that the scoop handles are stored in such a manner that the handles do not come in contact with the food.
