- The bleach sanitizer in the kitchen was measured such that the testing strips were bleaching out. - The sanitizer was remade and test to be at 100 ppm. Ensure the concentration of the bleach sanitizer is maintained at 100 ppm, as overuse of sanitizer on food contact surfaces can cause contamination of food.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- No thermometer was available for dishwasher temperature monitoring and no log was being maintained.

- The wall behind the sink tap is in disrepair, the vinyl tiles were coming off.- Ensure to reseal the vinyl tiles.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1) Canopy vent over the kitchen stove still had plastic wrap on it. 2) The warmer under the stove had cardboard on it. 3) A drawer in the kitchen was lined with aluminum foil, and the foil was ripping apart.- Remove the plastic and cardboard so that the surfaces are smooth easily cleanable and non-absorbent to moisture.- Replace the aluminum foil at regular intervals so that it is smooth and easily cleanable.
