      • Observation(s): Cleaning required around equipment, in particular on floors and walls in hard to reach areas.

      • Observation(s): Quat sanitizer buckets in the kitchen and front service area measured at 100ppm.
      • F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.

      • Observation(s): Eggs were observed at time of inspection on counter at 20C. Eggs were put back into cooler by staff. Ensure potentially hazardous foods are not stored at or above 4 C. Eggs should not be at room temperature unless it is very busy and being used quickly.
      • F1.4A - Potentially hazardous food must be maintained at 4°C or colder.
    • F1.5 - Has the operator taken steps to ensure employees are using adequate hygiene measures to prevent contamination of food?
      • Observation(s): Employee observed wiping hands on apron. Hygiene discussed with employee and hands were washed.
      • F1.5B - Employees must exhibit cleanliness and good personal hygiene.
    • F2.3 - Are equipment, food contact surfaces and utensils washed, sanitized and stored in a manner that removes/prevents contamination?
      • Observation(s): Raw beef observed on edge of meat freezer. Ensure area is kept in clean and sanitary condition at all times.
      • F2.3G - Equipment, utensils and food contact surfaces must be cleaned and sanitized in a manner that removes contamination.

      • Observation(s): Bottle labelled as sanitizer in the front serving area did not contain an active sanitizer. Employee replaced solution at the time of inspection.

      • Observation(s): Quats concentration was found at 100 ppm when storing wiping cloths in a container. Operator prepared a new solution of Quats at 400 ppm to store wiping cloths.
