- Operator has screens on front and back doors but these were open for walk ins.
- Corrective Action(s): Cloths can be stored in sanitizer that is refreshed regularly during the day.
- Please ensure that sanitizer is available for cleaning food contact surfaces especially after chopping meats and other items.
- Keep screens closed at all times, especially during food prep.

- Observation: Operator turns off main line cooler every night and restarts at 4pm. After 30 mins, ambient temperature in cooler is still 21C before food is placed in cooler top and bottom. Food was brought out from walk-in cooler (1C-4C) and placed in this cooler before it reached 4C. This unit is not designated to cool quickly enough and will not maintain foods at 4C if used in this manner. Refer to Food Premises Reg Sec. 16(c).
- Corrective Action(s): Keep cooler running unilt it reaches 4C before placing cold food items. Monitor temperature of cooler and food items during and before prep. Operator to use up food items as soon as possible, keep minimal food items in cooler. Date to be corrected by: today.
