      • Observation (CORRECTED DURING INSPECTION): Rice in large rice warmer is 51.0C and stored inside for 1hr. Operator holds the rice, with machine off and transfers a portion to smaller rice cooker to warm up. Larger rice cooker, if turned on, operator says this makes the rice hard, stick to the bottom.
      • Corrective Action(s): Heat to 74C and turn the machine on and keep rice at or above 60C.
      • Mix to allow rice to keep warm thoroughly at 60C.
      • OR use up within 2hrs.
