      • Observation: Large food debris build up and grease in the following area:
      • 1. Large grease build up behind the stove unit as well as under the hood vents
      • 2. Grease build up in between the deep fryer
      • 2. mold build up on the condenser in the walk in fridge
      • Corrective Action(s): Clean and sanitize the following areas listed above. Regular cleaning schedule should be maintained for hard to clean areas such as under the stove units and hood vents. Relying on vent cleaning company every 4 months is not sufficent as there is large accumulation of grease and debris. Establish a regular monthly cleaning schedule for these tough to reach areas listed above.

      • Observation: A few large rodent droppings visible along fryer wall, behind dishwasher, grease trap and along back door with screen.
      • Some chewed foam pieces along back door and behind dishwasher.
      • Holes are visible on walls in the same areas.
      • Corrective Action(s): Plug all holes with pest proof material (concrete, steel wool, etc.) or other materials recommended by your pest control contractor.
      • Contact your pest control contractor as soon as possible to install appropriate traps and use other methods.
      • Clean all areas with droppings.

      • Clean along walls, remove food debris and grease.
      • 2. Remove fryer oil at end of night and do not store inside premises in open containers.

      • Observation: Amount of dried pork and beef and chopped veggies out in bins at room temperature (11-13.1C) is too large to be finished cooking in 2hrs.
      • Corrective Action(s): Reduce quantity of meats and chopped vegetables to be used up within 2hrs or keep in cooler until it is used.
      • All items should be stored below 4C.

      • Observation: 1. Fume hood and vent grills are dripping with grease.
      • Walls on the side also dripping with grease.
      • Between the fume hood and wall there is a gap where containers are filled with grease.
      • Floors are greasy in this area.
      • 2. Cutting boards are on a small rack below the middle prep table, sitting on top of a tray with greasy, red liquid.
      • 3. Cob webs and spilled sugar between pallets of dry storage area.
      • 4. Grease trap area under 3-comp sink is greasy, black coated.
      • Corrective Action(s): 1. Arrange cleaning of fume hood and surrounding area. Date for next cleaning is in May. Arrange within the next month.
      • 2. Cutting boards were removed and cleaned during the inspection - thank you.
      • 3. Sweep cob webs. These have improved since last inspection but regular cleaning in this area is still needed.
      • Add sticky traps for crawling pests and spiders in this area or consult with pest control.
      • 4. Scrub area and use a degreaser. Clean on regular basis and do not allow to build up.

      • Observation: Previously fried prawns, beef strips, fried pork pieces are stored at room temperature from 3PM until 7:30PM. 10C at the time of inspection.
      • Corrective Action(s): Store smaller quantities to use up in max. 2hrs during dinner rush.
      • Store the rest in the fridge until it is needed.

      • Observation: Ants crawling out of pile of debris next to grease trap. Signs of an ant colony. This is close to food prep area.
      • Pallets leading to back exit are filled with spider webs and dusted with sugar, flour and MSG crystals.
      • Foods are in lidded containers, not all lids are on. No signs of pests inside food containers.
      • Corrective Action(s): Call pest control contractor to remove ants and colony and to inspect for other colonies and pests.
      • Work with pest control contractor to come up with long term solution.
      • Keep lids on containers.
      • Keep up with monitoring and cleaning in all areas.

      • Observation (CORRECTED DURING INSPECTION): 1) Several large bus pans of fried meats were unrefridgerated. Internal temperature 10-12 Celaius. Moved to fridge. Keep only small amounts of food out of the fridge for cooking.
      • 2) About a dozen portioned containers of wontons were unrefridgerated on top of the microwave. Keep refridgerated until time to heat and serve. 17 degrees internal temperature. Discarded.

      • Observation (CORRECTED DURING INSPECTION): 1) Spray bottle for bleach was extremely strong. Use only about a teaspoon of bleach per spray bottle.
      • 2) Cleaning cloths were on food prep surfaces , not in sanitizer. Keep cleaning cloths in bleach water.

      • Observation: 1) Quite a few walls and most hard to reach corners under equipment require a thorough cleaning. Several very dirty shelves noted.
      • 2) Strong odor noted around grease trap. Owners do not know when grease trap was last serviced. Grease traps must be serviced by a licensed waste management company at least every 90 days.
