      • Observation (CORRECTED DURING INSPECTION): Low temp dishwasher had empty sanitizer bucket. First run tested 0ppm of chlorine on the plates.
      • Corrective Action(s): Ensure dishwasher can achieve >50ppm of chlorine at all times, replace sanitizer buckets when empty. Operator replaced the sanitizer bucket with new one. After multiple runs, dishwasher measured >50ppm of chlorine on the plates. Check the sanitizer bucket on a daily basis.

      • Observation (CORRECTED DURING INSPECTION): Main handwash station near the stove units has the cold water knob taken off. Handwash station does not currently work

      • Observation (CORRECTED DURING INSPECTION): Spray bottle in the kitchen has 0ppm of sanitizer. Operator indicated it is all purpose.
      • Corrective Action(s): Ensure there is always >200ppm of QUATS sanitizer available during operating hours. Operator replaced the solution with >200ppm QUATS from the dispenser.

      • Observation: Large rodent droppings behind chest freezer and on a sticky trap in dry storage area.
      • One dropping along baseboard.
      • Some droppings appear quite old.
      • Corrective Action(s): Clean up all droppings.
      • Use sanitizer to eliminate smells and trails.
      • Call pest control and install traps for the potential size of rodent.
      • Sticky traps are not as effective. Follow recommendations from pest control.
      • Clean up all spilled flour on shelving and on ground.
      • Clean up any water sources.

      • Operator said they will clean and call pest control.
      • Operator said it was likely old and the problem was addressed by pest control already.
