      • 2 compartment sink not draining properly. repair sink to ensure proper drainage. Dishwasher reading at proper temperature and other sinks available.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Ceiling requires cleaning to remove the build up of debris.

      • The sanitizer used to store utensils measured a Residual of 0 ppm QUAT. A new solution was prepared measuring 200 ppm QUAT.

      • 1. Bowls were being used as scoops and stored directly in bulk foods.Use a scoop with a handle and store in a way that protects bulk foods from contamination.2. A bag of onions in a porous crate was stored on the floor of the walk-in cooler. An empty crate was stored underneath to lift onions off the floor.

      • Capers that state refrigerate after opening were bring stored at room temperature.The capers were moved to refrigeration.

      • The top portion of the pizza prep cooler measured a temperature of 11 degrees Celsius while the display indicated 2 degrees Celsius. High risk foods were moved to another cooler. Top portion not to be used until it can maintain 4 degrees Celsius or less.

      • There was an accumulation of food debris on the back of the meat slicer guard. Ensure that meat slicer is fully disassembled and cleaned between use.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. The lighting in the walk-in cooler was not adequate to illuminate all areas of the walk-in cooler. Replace the bulbs in the Freezer and Cooler to optimize lighting. 2. The back Corner Sink was not secure in place. Secure back Corner Sink. 3. The bar sink was not sealed to the wall. Seal sink so that it is smooth, non-porous and easy to clean.4. One of the lightbulbs in the ventilation canopy was not functioning. Replace Light Bulb.All items were completed by the Operator. All walls floors and ceilings were smooth, non-porous, and easy to clean.

      • There was an accumulation dust on the fan covers in the walk-in Cooler and Freezer. This was corrected by operator. Prior to opening, please clean and sanitize all surfaces, equipment, and utensils.
