- Rice cooker is stored on the floor, and in use to cook rice. Please ensure that food cooking equipment is stored up on shelving and not on the floor.

- Refrigeration units were below 4C.Bag of chicken thighs were at 17C. Operator stated that they were taken out from frozen last night and placed on counter by staff. Operator removed the chicken thighs and placed into garbage.Ensure that all staff are trained on proper thawing practices - always in the cooler/under cold running water.Operator takes out pickled items during meal prep time. Pickled items indicate 'refrigerate after opening'. Recommend taking small amounts out as needed but not a large container so that it can remain safely temperature controlled.

- Fly traps placed around food processing area. Discussed it can be used but not around food processing. Please ensure that nuisance is addressed.

- Shelf has been added but it is raw wood. Ensure surfaces are smooth, easily cleanable and impervious to moisture.

- Meat grinder machine had bits of meat in it. Operator stated that it is very hard to clean. Recommend to not use this machine if not easily cleanable. Operator stated it will be cleaned before use. Ensure that machine is fully AFTER each use so meat products do not get encrusted on to it. Meat slicer had debris on it. Operator stated it is no longer in use. Ensure that any equipment is fully cleaned after use. Recommend removing on site, any equipment that is no longer in use.
