      • Used cleaning clothes were left on the top of steam table. - The operator was asked to remove the used cleaning clothes from the steam table and put it in laundry. Operator was also asked to always store the used cleaning clothes in sanitizer solution after use.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The Sanitizer dispenser near the mop sink was dispensing sanitizer at 0 ppm. - Please get the sanitizer dispenser recalibrated.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Ambient temperature of the fryer cooler was 9.6 degrees.2) The chicken was probed in the salad cooler and was at 10.7 degrees.-All the food from the fryer cooler was moved to sandwich cooler. The chicken in the salad cooler was thrown out.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Paint inside the ice maker was coming off.- Please repaint the icemaker.
