      • This mobile food establishment is classified as a type E mobile food establishment. Measurements were taken of their freshwater and grey water tanks. The freshwater tank measured 16" x 24.5" x 12" which calculated to be a water volume of 77 litres. The grey water tank measured 16.5" x 30" x 18" which calculated to be a water volume of 145 litres. The freshwater tank volume is only sufficient for a type D mobile food establishment (75 litres minimum). The freshwater tank must be replaced such that the minimum water volume of 130 litres is met for a type E mobile or the mobile food establishment it is to be reclassified to a type D mobile.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Corn dogs and fries are stored in cold holding cabinets that are between 12.0 degrees Celsius and 14.5 Degrees Celsius.Please ensure high-risk food products are stored at 4 degrees Celsius and below. During the inspection the operator placed the corn dogs and fries in coolers with ice.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The cold holding cabinets are between 12.0 degrees Celsius and 14.5 Degrees Celsius.Please use a freezer or fridge for cold holding during events and ensure cold holding units maintain a temperature of 4 degrees Celsius and below.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The following areas require some minor cleaning: -Fridge door. -Cutting boards Please clean indicated areas and ensure all areas are maintained in a clean and sanitary condition.

      • Hand hygiene was not being performed between tasks. Importance of hand washing sink was discussed with the operator. Please wash hands between tasks.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • It was noted that the facility was making dough, deep frying and packaging mini donuts outside of the permitted mobile unit. The operator indicated that they do not have adequate space to perform food handling inside the mobile unit. Please ensure to perform all food handling inside the mobile unit or scale back on menu items.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • It was noted that the facility was making dough, deep frying and packaging mini donuts outside of the permitted mobile unit. A plumbed in hand washing sink was not observed. Please perform all food handling inside the permitted mobile food vending unit.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • It was noted that the facility was making dough, deep frying and packaging mini donuts outside of the permitted mobile unit. Please adhere to food handling permit conditions and ensure that all food handling other than serving must occur in the permitted mobile vending unit.

      • The bleach bottle was unlabelled.Ensure chemicals are labelled when stored out of their original containers.

      • The temporary handwashing station at the attached lemonade stand had no grey water collector.- A grey water collector was provided during inspection.Ensure handwashing sink is fully equipped at all times.
