      • Staff was observed donning gloves without prior handwashing in the kitchen.Ensure handwashing is completed before glove use.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Large pot of high-risk food was being cooled using an ice wand method. Ice wand was melted and food had temperatures between 24-32C using a laser thermometer. Food was prepared within the last 2 hours.It is recommended food is stirred using the ice wand at regular intervals, ice wand is replaced as needed, temperature records are maintained at required times.Cool food from 60C(140F) to 20C(70F) within 2 hours, and from 20C to 4C(40F) or less within 4 hours.
