      • Observation (CORRECTED DURING INSPECTION): QUATS dispenser at the 3 compartment sink dispesned <200ppm of QUATS. Inspector noticed the sanitizer bag is empty.
      • Corrective Action(s): Replace the sanitizer bag and ensure to always check the sanitizer level in the bags prior to dispensing and replace when empty. Operator replaced the sanitizer bag. QUATS dispensed at >200ppm

      • Observation: Main handwash station located at the back of kitchen near the stand up freezer is leaking water when hot water knob is turned on. Water is leaking onto the ground when turned on for handwashing.
      • Corrective Action(s): Repair/replace the knob to ensure no water is leaking and the handwash station is fully functional for handwashing purposes. In the mean time, use the handwash station near the 3 compartment sink

      • Observation (CORRECTED DURING INSPECTION): - QUATS sanitizer bottle used to clean meat slicer measured at 0ppm. Staff reported meat slicer sanitizer bottle was filled from dispenser by the mop area - refilled and tested at 0ppm.
      • Corrective Action(s): - Fill all sanitizer bottles at the 3 compartment sink QUATS sanitizer dispenser.
      • - Staff re-sanitized meat slicer with 200ppm QUATS sanitizer during the inspection.

      • Observation (CORRECTED DURING INSPECTION): Whip cream, small milk creamers and cheese curds are between 11.4 to 14.4C.
      • Min temperature by probe thermometer held over 10min shows 14.4C.
      • Operator's thermometer shows 56.5F.
      • Corrective Action(s): Operator moved all items to working cooler at 4C.
      • Fix cooler to ensure it reads 4C/40F and maintains food temperature at all times.
      • Monitor frequently and do not put food inside unless it reads 4C/40F.

      • Observation (CORRECTED DURING INSPECTION): Cheese curds, Whip Cream and Butter are between 7.9C-10.4C on top and bottom.
      • Thermometer shows around 7C (at the far back).
      • Temperature taken at beginning and end of inspection, unlikely due to defrost cycle considering the length of time. And unlikely due to refill issue since all items were stored in walk in cooler and simply transferred to this cooler.
      • Corrective Action(s): Move to working cooler.
      • Monitor temperature of this cooler and ensure that it is 4C before putting in food items.

      • 3. Corners and underneath racks at back storage area have food debris and potential rodent droppings in left hand corner.
      • Corrective Action(s): 1. Replace light bulbs.
      • 2. Replace door seal.
      • 3. After light is installed, ensure there is routine cleaning of all areas underneath racks.
