    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The single chest cooler was turned on late - a display temperature of 15C was noted. The Operator had written down on a temperature log '4C' but this is contrary to the temperature gauge inside. Perishable foods were relocated to the freezer temporarily until the coolers temperature could decreaseOn another check, while the cooler was down to 10-12C, the operator stuck a frozen item on the temperature gauge which caused an inaccurate display of temperature.REQUIREMENT: Refrigeration equipment must be turned on well in advance to ensure it's operating properly. Do not alter or manipulate the temperature gauge, and ensure accurate temperature logs are taken otherwise perishable foods could be ordered to be discarded.
    • 23. Has appropriate notification been given for the special event?
      • The vendor has not submitted sufficient notification indicating that there would be cooking onsite. The 'Type A' mobile operation that was declared is not meant to cook, prepare, or serve open handled foods.REQUIREMENT: A temporary vendor form must be completed prior to the event so that health and safety aspects of the setup can be reviewed and modified.

      • The food warmer/hot-holding unit was measured at 55°C. The inspector informed the operator that high-risk food items must be kept hot at a temperature of 60°C or above.
