- The concentration of the bleach sanitizer solution was too strong. Ensure the bleach sanitizer solution has a food safe concentration (100ppm). Sanitizer diluted during time of the inspection.

- The prep cooler by the front service area had an ambient air temperature of 10-11C. All high-risk perishable items were discarded (chicken, eggs, etc.). The remaining items were moved to the walk-in cooler. Please have the unit serviced to ensure it can maintain a temperature of 4C or lower.
