- Observation (CORRECTED DURING INSPECTION): No sanitizer connected to dishwasher at the time of the inspection. An extra container of detergent was connected rather than sanitizer and manual dish detergent was connected to rinse aid tube causing significant foaming in machine. No sanitizer present on-site for dishwasher (bleach present for manual sanitizing)
- Corrective Action(s): Operator must ensure there are always sufficient and correct chemicals in place to ensure dishes are effectively washed and sanitized. Chlorine sanitizer (bleach) was connected to the dishwasher at the time of the inspection and 50 ppm chlorine was detected in rinse however due to the foam content, machine needs to flushed prior to use. Operator to obtain correct chlorine sanitizer. Correction date: Dec. 9/17
