      • 2) Injeera dough fermenting at room temperature
      • Corrective Action(s):
      • 1) CORRECTION ORDER ISSUED - Item has been placed on HOLD until operator can demonstrate that item has been prepared in a safe manner. You must not give away, sell or serve this item.
      • 2) As discussed in previous inspection, the fermentatin process must be closely monitored. Food safety plan still required. Ferment in cooler.

      • Observation (CORRECTED DURING INSPECTION): Injeera toppings noted at 50C.Staff stated that the injeera toppings are cooked in batches, stored in the fridge and reheated in the microwave as needed. Staff also stated the remainder was to be put back in the cooler.
      • Corrective Action(s): Discontinue this practice as this puts the food through the danger zone (4-60C) more than twice. Leftovers can only be re-used once. Discard the toppings.
