- Observation (CORRECTED DURING INSPECTION): Some of the large and most of the small beef patties in the CVap unit were probed to be below 60 degC. These were stored in the bottom 2 units. Foods in the rest of the 6 units were above 60 degC.

- Corrective Action(s): Clean up all droppings and sanitize the affected areas. No signs of mice found anywhere else. Spoke to staff and they indicated that premise is serviced by a licensed pest control company approximately once per month using mechanical traps.

- Corrective Action(s): Mouse droppings were found on the floor and on some pallets in the upstairs storage area. Clean up all mouse droppings and disinfect all affected areas. If any paper products are found to be damaged/contaminated by mice they shall be discarded. Mouse droppings were not found in the main store area. Premise is serviced by a license pest control company on a monthly basis using traps.

- Corrective Action(s): In-use wiping cloths must be stored in a bucket of sanitizer when not being used. Staff advised that it is not regular practice to keep a bucket of sanitizer in the servery during business hours. Discussed with manager and advised that staff need to be reminded/re-trained. Manager provided a bucket of quats sanitizer at time of inspection.

- Observation (CORRECTED DURING INSPECTION): Lettuce was being washed/prepared in wash compartment of 3-compartment sink while dirty utensils were piled high in the adjacent sinks and the hose for the detergent dispenser was in the sink with the lettuce.
- Corrective Action(s): When washing/preparing lettuce in the sink please make sure the sink is cleaned before use, that dirty utensils and/or dishwashing is not occuring in the adjacent sinks at the same time and keep the hose for the detergent dispenser out of the sink to avoid contaminating the food. Instructed manager to take corrective action at time of inspection.

Staff said the quats sanitizer is usually changed every 2 hours and at time of inspection the sanitizer had been prepared about 1 hour and 45 minutes prior. Advised staff that during busy periods the quats sanitizer may need to be changed more frequently and to ensure to monitor the sanitizer concentration. Staff changed the quats sanitizer at time of inspection.
