    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Stuffed buns in the blue mini fridge were at 7 degC. The thermostat was adjusted during inspection.
      • Corrective Action(s): Ensure that the mini fridge can maintain a temperature of 4 degC or below at all times.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): 1) Discussed dishwashing procedures with staff on duty. She mentioned that dishes are not sanitized prior to air drying.
      • 2) The sanitizer bucket at the FOH and BOH did not have adequate sanitizer in them.
      • Corrective Action(s): 1) Dishes must be washed with detergent in the first sink, rinsed in the 2nd and sanitized in the 3rd, prior to air drying. Train staff on this. Also, show them how much sanitizer to add to water in the 3rd sink.
      • 2) Train staff to measure the right amount of sanitizer when making the solution. Follow instructions on the sanitizer bottle i.e. 8mL in 4L water for 200ppm Quats.

    • 502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
      • Observation: There was only one staff working at the time of inspection and they did not have Foodsafe Level 1 or equivalent certification.
      • Corrective Action(s): In operator's absense, at least one staff on duty must be certified.

      • Observation (CORRECTED DURING INSPECTION): Cooked pearls had no time stamp.
      • Corrective Action(s): Cooked pearls MUST be time-stamped if they are to be stored at room temperature. They must be discarded after 4 hours.
      • Violation Score: 5
      • 301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Ice machine had some mold building up inside.
      • Corrective Action(s): Remove the ice and properly clean and sanitize the machine. The ice machine must be cleaned regularly.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): 1) Sanitizer bucket in the FOH had no detectable sanitizer in it. Wiping cloths were stored on countertops.
      • 2) There's only 1 sink plug. Proper dishwashing procedures should be followed.
      • Corrective Action(s): 1) Refresh sanitizer solution regularly. Store all cloths in the sanitizer solution.
      • 2) Get 2 more sink plugs to help with proper dishwashing.
      • Violation Score: 5
    • 101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
      • Observation: There's plastic covering the wall behind the 3-compartment sink.
      • Corrective Action(s): Remove the plastic. Provide caulking along the edge of the 3-compartment sink and hand sink.

      • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation: Kimbab has been added to the menu.
      • Corrective Action(s): Update your FSP to include any new menu items.

      • Observation (CORRECTED DURING INSPECTION): There's no available sanitizer in the front of house (FOH).
      • Corrective Action(s): Provide sanitizer in the FOH as well as the back.
      • Violation Score: 5
    • 208 - Foods obtained from unapproved sources [s. 11]
      • Observation: Operator has added corn dogs, egg tarts, and buns to their menu. She did not have receipts for the products onsite.
      • Corrective Action(s): Email me copies of the receipts. These foods must be picked up cold at the source, transported cold i.e. inside coolers with ice packs then placed inside the coolers in the restaurant on arrival.
      • Violation Score: 3
      • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation: New menu items have been added without approval i.e. corn dogs, stuffed buns
      • Corrective Action(s): Update your FSP and submit it to me for review. Include transportation and reheating procedures as discussed.
