      • Observation (CORRECTED DURING INSPECTION): Blanched sausages were stored in a pan on top of ice.
      • Corrective Action(s): As discussed, blanched sausages must be kept refrigerated as per your FSP. Do not store these outside the cooler.

      • Observation (CORRECTED DURING INSPECTION): Cooked sausages were noted at room temperature with a date stamp. However, sausages are not meant to be stored out at ambient temperature.
      • Corrective Action(s): Place the sausages back in the cooler. Do not store these out at room temperature.

      • Observation: Double door u/c cooler by prep sink is at 6 degC even though the sensor indicates at temperature of 39 degF (3.9 degC).
      • Corrective Action(s): Manager adjusted the thermostat during the inspection. Ensure that the temperature drops to 4 degC or below. Keep a thermometer to monitor the actual temperature of the unit.

      • Observation: Sensors in the refrigeration units are being used for temperature monitoring. Thermometers are not provided inside every cooler.

      • measured 12c. Foods were stored on ice for more than 2 hours.

      • 3.) Walls in the office had tape and it is observed to be damaged
      • as well.
      • 4.) Ceiling tiles in the staff room, dishwashing area and
      • in the cookline were wearing off.
