      • Observation: 1) The rubber seal on the door of the "Tyler" brand walk-in freezer is in disrepair.
      • 2) The soap dispenser at the hand sink is loose and does not have any soap in it.
      • Corrective Action(s): 1) Replace the seal around the door of the walk-in freezer.
      • 2) Refill the soap dispenser and afix the dispenser to the wall.

      • Observation: 1) Bread case is missing a door on both ends of the unit (2 in total).
      • 2) The gap in front of the cake display case that was used to store cake boxes in the past is empty now. Several food and other items have fallen into the gap. Staff are using cardboard to cover the holes to prevent items from falling into it.
      • Corrective Action(s): 1) Replace the missing doors on the bread case.
      • 2) Clean and reseal the gap in front of the cake display case using material that is smooth, non-absorbent and easy to clean.

      • Corrective Action(s): Please ensure paper towels are provided at hand sinks at all times, and make sure the paper towels are placed in the paper towel dispensers.

      • Observation: Mouse droppings and a dead mouse in a glue trap were found in an undercounter cabinet below the hand sink in the front bakery service area.
      • Corrective Action(s): Clean up all droppings, remove the dead mouse and clean and sanitize the area. Bakery manager indicated the premise is serviced by a licensed pest control company every 2 weeks.

      • Observation: High temperature dishwasher did not have a final rinse temperature of at least 71 degrees Celsius.
      • Corrective Action(s): Final rinse temperature must be at least 71 degrees Celsius for adequate sanitizing of utensils and food equipment. The highest temperature reached was 65.6 degrees Celsius as per thermal label. Dishwasher was run 3 times with periods of time in between for replenishment of hot water. Please have dishwasher serviced to ensure minimum final rinse temperature is met. In the meantime all utensils and food equipment shall be washed using the 3-compartment sink method.

      • Observation (CORRECTED DURING INSPECTION): Mouse droppings found in cupboard next to hand sink in front service area.
      • Corrective Action(s): Clean up all mouse droppings and sanitize the affected area. Mouse droppings were not found anywhere else. Store manager said store is serviced by a professional pest control company every 2 weeks. Bakery manager corrected at time of inspection.
