- Observation (CORRECTED DURING INSPECTION): Quats solution in one sanitizer bucket storing wiping cloths near grill area measured 100 ppm with a test strip.
- Corrective Action(s): -Ensure 200 ppm quats solution is used to effectively sanitize food contact surfaces. Prolonged use of the solution and storing dirty cloths in the solution weaken the sanitizing capability of quats which could result in incomplete destruction of bacteria. Replace the bucket with fresh quats solution every 2-4 hours or when the solution becomes visibly dirty.
