- 203 - Critical Food not cooled in an acceptable manner [s. 12(a)]
- Observation: (CORRECTED DURING INSPECTION) Food staff stated that certain foods are cooled overnight or for a few hours on the countertop (soups, turkey, etc). Food that has been sitting at room temperature for an excessive period of time may result in growth of harmful bacteria that can cause foodborne illness. No food was observed to be temperature abused at time of inspection.
- Corrective Action: Ensure that foods are portioned so that they can be quickly cooled and put in the fridge in a timely manner. Foods must be cooled from 60 C to 20 C within 2 hours, followed by 20 C to 4 C within 4 hours. Foods that are not cooled quickly enough should be discarded and not served to the public.
- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: One shelf for bowls had significant build up of dry food debris. Handles and knobs for stove top have buildup of grease and residue.
- Corrective Action: Clean the indicated areas immediately. Ensure that cleaning is done on a regular basis for all items involved in food contact and food preparation. Cross-contamination between dirty areas and food may occur due to unsanitary conditions.
- 311 - Repeat Premises not maintained as per approved plans [s. 6(1)(b)]
- Observation: Covers for fluorescent tube lighting missing.
- Corrective Action: Install covers for lighting inside of the kitchen. If the light fixture is broken, physical contamination of food and food equipment may result.
