Refrain from placing any high-risk foods in the cooler until it can maintain a temperature of 4C or lower. Cakes with no frosting were stored in the cooler.

- 1. The sanitizer solution spray bottle was empty.- Ensure a food-safe sanitizer is prepared during business operation.2. No sanitizer solution was prepared for the bucket to store the cleaning rags between uses.- Ensure rags are stored in a sanitizer solution bucket.***Corrected During Inspection: Staff mixed a 100ppm bleach solution for the spray bottle and the sanitizer bucket.

- A scoop and a plastic container were stored inside the flour container in a way that it was touching the food items.- Violation was corrected on-site: Staff removed the plastic container and stored scoop away from the food.

- High temperature dishwasher was run three times but failed to reach up to 71C. Manual dishwashing methods reviewed with the staff.- Follow the manual dishwashing protocol until the dishwasher is fixed.
