    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Could not locate the chlorine test strips for monitoring sanitizing solution concentration.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Pieces of cardboard were found lining the shelves and floor of the walk-in cooler. REQUIRED ACTION: remove the cardboard lining. Floor and shelving surfaces must be smooth, water-resistant, easy to clean and in good repair.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Numerous scoops were found sitting directly in dry bulk food bins with the handle in direct contact with food products.REQUIRED ACTION: scoops must be stored outside of food bins and such that the handle is not in direct contact with food.

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Black garbage bags were being used to cover dough. Ensure staff do not use garbage bags for food storage as they contain a chemical for odor suppression that can leach into food. Use only food-grade packaging for food storage.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Large gap noted between the back door and door frame (owner reported this was due to a vehicle running into the back door, damaging the door frame). Operator is currently working with contractor to have the gap repaired. Ensure the repair is completed in a timely manner, so as to help prevent entry of pests.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Some of the large white laundry baskets used for storage of bread were noted to be old, worn and discolored. All food equipment must be smooth, impervious to moisture, easy to clean and in good repair. Ensure that you sort through all food baskets and discard all that do not meet this requirement.
