      • Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (milk) was stored above 4 degrees C for less than 2 hours in the under-the-counter cooler.
      • Corrective Action(s): Manager adjusted the positioning of the under-the-counter cooler to facilitate better air flow, and lower the cooler temperature to 4 degrees C or less. Ensure potentially hazardous food is stored at or below 4 degrees C to prevent growth of potential harmful bacteria and/or production of toxins.

      • Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was available in the sanitizer pail. Chlorine sanitizer was not setup in the third compartment sink. Manager informed only one sink plug is in good working order at this time, which was observed to be in use for containing soapy water in the first compartment sink.
      • Corrective Action(s): Manager moved the sink plug to the third compartment sink and setup 100 ppm chlorine sanitizer in the third compartment sink unit. Ensure all food contact surfaces/preparation utensils are washed, rinsed, sanitized in 100 ppm chlorine sanitizer via immersion for at least 2 minutes, and then air dried.

      • Observation: 1. Only one of the three functional sink plugs is in good working order according to the Manager. Other sink plugs broke yesterday according to the Manager.

      • 2. Under-the-counter cooler was above 4 degrees C (measured at 7.4 degrees C). This is a repeat violation.
      • Corrective Action(s): 1. Manager informed two sink plugs are on order, and would arrive within 1 week. Ensure there are at least three functional sink plugs available at this food service establishment; Correct within 1 week.

      • 2. Monitor and maintain the under-the-counter cooler at 4 degrees C or less to store potentially hazardous food (e.g. milk and cream) at a safe temperature. Manager moved the under-the-counter cooler away from the wall to facilitate more air flow, after which the refrigeration temperature was at 1 degrees C on the left side and 3.9 degrees C on the right side of the cooler interior (Corrected during the inspection). This refrigeration unit was equipped with a thermometer for monitoring temperatures.

      • Observation: Under-the-counter cooler was at 7.5 degrees C at the time of inspection.
      • Corrective Action(s): Adjust, repair, or re-service the above-noted under-the-counter cooler to maintain it at 4 degrees C or less. Ensure cold potentially hazardous food is stored at 4 degrees C or less. Staff placed the two jugs of milk observed to be in this cooler into a container containing ice water, and then stored it into the cooler as an interim measure.

      • Observation: *Repeat Violation* Back handwashing station was not supplied with water. Staff are using the front handwashing station (easily accessible and in close proximity) directly behind the wall for handwashing.
      • Corrective Action(s): Ensure that the back handwashing station is supplied with hot and cold running water, soap and paper towel for adequate handwashing for staff. In the meantime, continue using the front handwashing station. It is easily accessible and within close proximity.

      • Corrective Action(s): Manager was able to fix the fauctet handle such that the handwashing station is supplied with hot and cold running water, liquid soap and paper towel.

      • Observation (CORRECTED DURING INSPECTION): Ice scoop had accumulation of debris over it.
      • Corrective Action(s): Ensure the ice scoop is washed, rinsed, sanitized, and air dried to maintain in a sanitary condition. Assistant Manager immersed the ice scoop in hot soapy water in the first compartment sink, and informed she would wash, rinse, sanitize, and air dry the ice scoop prior to reuse.

      • Corrective Action(s): Ensure the above-noted handsink is repaired to be supplied with cold running water as well; Correct within 2 weeks. Re-affix the wall-mounted paper towel dispenser at this handsink; Correct within 2 weeks.
