      • Observation (CORRECTED DURING INSPECTION): Rodent droppings were observed on one floor corner in the stock room.
      • Corrective Action(s): Operator removed the rodent droppings from the affected area during the inspection. Monitor for signs of recent pest activity, and continue with the pest control measures: regular cleaning and sanitizing of the areas of the food premises, sealing any potential entry points, protecting food from potential contamination, and having regular pest control services of traps.
      • Note: No damage to dry products was evident at the time of inspection. Dry goods were observed to be stored in a pre-packaged condition on shelving units off the floor.

      • Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was measured in the sanitizer pail of the front service area.
      • Corrective Action(s): Operator replaced the solution in both sanitizer pails with 100 ppm chlorine sanitizer during the inspection. It was reviewed to change the chlorine sanitizer frequently throughout the day to maintain it at 100 ppm.

      • Corrective Action(s): Clean and sanitize the floor with bleach water to remove the rodent droppings; Correct within 2 days. Monitor for signs of pest activity, and continue with your pest control measures: sealing potential entry points, regular cleaning, keeping dry goods prepackaged and stored off the floor, and pest control program.

      • Observation (CORRECTED DURING INSPECTION): Handsink in the back area was not conveniently accessible as it was partially blocked by a table.
      • Corrective Action(s): Ensure there is enough clearance space around handsinks so that they are conveniently accessible for handwashing. Operator re-located the table so that it did not obstruct the handsink.

      • Observation (CORRECTED DURING INSPECTION): 1. Raw meat was observed on a higher shelving unit than potential ready-to-eat food (lettuce, cucumber, and lemons).

      • Corrective Action(s): 1. Ensure to store raw meat on the lowest shelving unit in the walk-in-cooler separately from ready-to-eat food products to protect ready-to-eat food products from any potential contamination.

      • Ready-to-eat food and raw meat were stored in covered containers, and raw meat juices were not observed to be dripping over ready-to-eat food products. Operator re-arranged to the food products to store raw meat on the lowest shelving unit separately from the potential ready-to-eat food products in the walk-in-cooler.

      • 2. Ensure to store the ice scoop either on a clean surface or clean container separately from the ice to protect the ice from any potential contamination. Operator removed the ice scoop from the ice machine, and placed it on a clean stainless steel table-top surface during the inspection.
